i'm going to share a recipe today. i know, so domestic of me. i have been on a huge cooking kick lately and a few weeks ago we were having a winter solstice party where the theme was to bring something spicy. i searched and searched fora recipe that would be good to take and i finally narrowed it down to a few different things and let cute guy pick. it was a spicy chicken soup.
pinterest lead me to this website called foodgawker and i absolutely love it! i found this recipe on there. it does take some time to make, so if you are going to try it, make sure you give yourself about two or so hours to make it.
ingredients:
- 2 quarts water
- 6 skinless, boneless chicken breast halves
- 1 teaspoon ground black pepper
- 1 teaspoon garlic powder
- 2 tablespoons dried parsley
- 1 tablespoon onion powder
- 1/2 teaspoon cayenne pepper
- 5 cubes chicken bouillon
- 3 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 (16 ounce) jar chunky salsa
- 2 (14.5 ounce) cans diced tomatoes with chilies
- 1 (10.75 ounce) can condensed tomato soup
- 3 tablespoons chili powder
- 2 (15 ounce) cans whole kernel corn, drained
- 2 (16 ounce) cans spicy chili beans, undrained
- 1 (8 ounce) container sour cream
- in a large pot over medium heat, combine water, chicken, salt, pepper, garlic powder, parsley, onion powder, cayenne pepper and bouillon cubes. bring to a boil, then reduce heat and simmer 1 hour, or until chicken juices run clear. remove chicken, reserve broth. shred chicken.
- in a large pot over medium heat, cook onion and garlic in olive oil until slightly browned. stir in salsa, diced tomatoes, tomato soup, chili powder, corn, chili beans, shredded chicken and 5 cups broth. simmer 30 minutes. pour into bowls and top with sour cream and shredded cheddar cheese.
delish.
i didn't use as much chili pepper as it says so it wasn't too spicy and i used kidney beans instead of spicy chili beans. i think next time i make this, i'll only use one can of the diced tomatoes. cute guy isn't such a huge fun of them and there was a lot in the soup.
i definitely suggest this soup and i was so proud that it turned out so well. love your faces.
